As for Souls/ER she's said the whole medieval fantasy shtick doesn't appeal to her at all. The games actively punish you for being too aggressive as well and parrying is at very best a small footnote and awkward as all fuck, I really just can not see her enjoying them.
She'd 100% like Bloodborne a lot though. Unique setting, aggressive gameplay.

Anyways the one thing I'm glad will come out of this playthrough is that she will be a lot more confident in trying new stuff going forward.
Before Lies of P and now Sekiro she was outright scared of what she wrote off as "hardcore" games for "hardcore" gamers in her mind. Now that she's playing them, and honestly even doing pretty well in them, that should make her a lot more willing to branch out without putting mental barriers up.

Dark souls 3 is before Sekiro. I ranked them based on difficulty, Sekiro is the most difficult game FROM has ever created because there are no summons or ways to overlevel into a broken build
Dark souls 3 has it's DLCs which has really challenging bosses that put it that high up between Friede and Midir and Gael
Bloodborne for the exact same reasons. The base game is a cakewalk compared to it's DLC
Elden Ring has far too many ways to break the game quite easily and every boss has a counter build, not to mention the offline summons or Mimic tear
Dark souls 2 has frustrating moments like the Shrine of Amana or the Frigid outskirts but the bosses are relatively easy in comparison
Dark souls 1 was hard for it's time but no longer. Manus is the only challenging boss in the entire game
Demon souls is just a puzzle game in disguise, all the bosses besides False king, Flamelurker and Maneaters are puzzle bosses
