If you are a successful artist yes but music companies have a wealth of experience in contract negotiation and management so they know how to make it worthwhile for the talent to stay. Big name artists still start their own record labels and other businesses all the time though.

Even as a smaller artist it can make sense to join and leave. I follow one indie singer-songwriter who spent time as a literal who indie, and got a big break with a major debut and a single release. However the song completely flopped because it was generic corporate pop that didn't fit her at all. Now she's back grinding as an indie and getting much more gigs and releasing more songs than before.
