Twitch bits aren't really any different from superchats, just slightly cheaper. Twitch just charges the extra portion upfront (instead of Youtube's later), which I believe is ~25%, leaving what you actually see in the chat being what actually goes to the streamer. Like you can pay $126 to get $100 in bits, which is with a 10% discount for bulk purchase.

It's just Twitch enforces ads more heavily which really help smaller streamers, plus the broadcaster can play ads whenever they want (well, at a small cooldown) to make more.
Additionally, they can take up freelance temporary sponsorships to play a game or watch an ad from the 'Bounty Board,' and they have a system to earn bits for the streamer. It used to be anyone could watch ads to earn bits to give to whoever, but they recently removed that in favor of an experimental bits based on viewer participation/interaction thing that's not even partially implemented yet, but doesn't sound like it'll help small streamers all that much compared to how it was before.

Plus like you said, gift subs that the channel owner can even gift themselves for cheap advertising, emotes that can be used site-wide to advertise their channel, and prime subs as well as watch parties that work really simply if you have Amazon prime.

Twitch just has a lot of monetization options for streamers.
