Also, VOD culture is just completely different for Twitch viewers.
Generally speaking, people don't watch the VOD unless there's something specific they wanted to see.
The most popular VODs are for events and collabs that chat usually can't participate in anyway, so it's basically just a normal video.
For Twitch, being live is what matters. It's not fun to watch a livestream where you can't participate.

On YouTube, streams are basically just videos. You as the viewer don't matter to the livestream experience on YouTube. The chat is fucking trash and there are barely any ways to directly interact with the streamer, many of whom won't (or can't, because the chat blows that hard) read chat messages.
So for you guys, the VOD experience is more or less the same as the live experience. Which is why YouTube viewers care so much more about VODs than Twitch viewers.
