There's basically only 2 schools of stop-motion in animation that came out of Hollywood.
The first is the biggest and it was everyone inspired by The Nightmare Before Christmas and all of the revolutionary filming techniques that film came up with.
The other school is Phil Tippett and it basically just comprises of himself, and it stems from his work in the 80s doing all the stop-motion in the first 2 Robocop films.

For me it's the opposite though, stylized characters in realistic environment and lighting has it's own appeal, also yeah cuteness is subjective, the characters have proportionally big eyes which is why people tend to find anime girls cute because it reminds them children, babies which we evolved to find cute. Here they're designed to fit in s more horror like setting where the usual anime style wouldn't work and they do s good job at it.

Making asymmetric, disproportional characters been a thing for decades, taking something and caricaturizing it is only possible with a deep understanding of anatomy, also it's not like the designs in this animation is exaggerated to the level of laika movies, they're relatively grounded while it's only faces that are exaggerated. Also attractiveness is indeed subjective, not only different nations have different beauty standards, babies are more likely to think those who look like their parents are safer to be around. The study you posted also doesn't show the faces that were shown to babies. Some people think blue eyes are peak beauty while others find it weird and creepy.
