There are 2 main reasons I don't really connect with vtubers. The first one is that I have a low attention span. I open any stream, watch for a minute and get bored. I haven't found a single streamer that keeps me focused. I have watched a few streams by doing something else in the background, like playing Tetris. But then I get bored of that and try to play a YouTube video forgetting I already have a stream open, and then just close the stream. I also just find them weird. I can feel the disconnect between the person and the character. Mori is probably the best example of this, but it applies to all of them for me. The gap between her lower voice and "edgyness" and her model and trying to act cute is off-putting.
