I remember reading that it's because it sells the book instantly. See, there's a ton of that garbage and there's barely a difference between most of them. People won't even bother with synopsis/short description printed on the back or on the first page since you'd get tired just picking and putting back books. You need to sell them with the title alone that you see when you just look at the shelf. So authors put story synopsis into the title.

I can relate to Mori, generic fantasy and its overdone single-cell reproduction of derivative works is an affront to all that creative and interesting, but I think she just doesn't know where to look for dark fantasy settings, or systems, that would give her the vibe she wants. From her two TTRPGs, namely GUN and WOD, and her choice of games (Dark Souls) and anime (Made in Abyss), I think I can approximate what she wants in a "fantasy" (aka pre-modern) setting and there are a few books that do that. If I had the opportunity to tell her myself, I would;

Basically most OSR:
Lamentation of the Flame Princess (modules) pic related is from Veins of the Earth
Mork Borg
Dungeon Crawl Classics
etc
(Also ADnD settings like Ravenloft, Dark Sun and arguably Planescape but 2e is kinda archaic now)

Non-OSR:
Dungeon World (It's more a muted lowish fantasy, but it does the job)
Mouse Guard (you can go full Watership Down if you want to)
Shadow of the Demon Lor- NOPE, too many rules
Warhammer Fantasy, unironically

There's also a specific genre of music that captures the EXACT feel and if Mori gave those a listen I'm sure she'll be inspired and it's called Dungeon Synth:

I'm very vaguely familiar with WHF but isn't it pretty close to what Mori would consider "generic"? It's same humans, orcs, elves, dark elves, undead stuff except with chaos, rats, lizards, vampires and such thrown into the mix. It's obviously much darker but I'm not sure there's an interesting twist to the setting that would make it stand out to her. Feel free to correct me, I've never seen a convincing "sales pitch" for WHF compared to 40k myself.

It depends on scale. On the grand scheme of things the setting is a wacky mess, but in more controlled and zoomed some """low""" fantasy aspects of it can be more prominent and thus appreciated, such as Vermintide with facing almost exclusively silly rrats so there's a central theme, and 3/5 of the party members are humans so it can still feel grounded despite having elves and dwarves.
Contrast this to MODERN DnD campaigns with every player being some stupid snowflake race so atrociously "unique" elves start looking fucking generic next to them. I apologize to Vesper and his campaign, but the inclusion of Warforged and Turtles as PARTY MEMBERS made me avoid it.

Although the WHF part was a throwaway statement, while valid, wasn't exactly my first go-to example for a darker fantasy. There are other options. Pic is a page off Mork Borg.

Mori should read Hellboy. If anything, it'd be a surprise if Mori hasn't read Hellboy given her art style and the industry she was orbiting prior to Hololive (and music).

Isekai unironically ruined fantasy. Not just the genre in Japanese anime and manga, but also ttrpg expectations of players who read them. I generally agree with you, but the best isekais find ways to circumvent that power fantasy somehow, like Re:zero punishing Subaru for treating characters like NPCs. Stuff like SlimeCiv and ShieldHero are pretty bad offenders though, their characters are just cardboard cutouts.
