Is it recommended to grind jukugo as a beginner? I'd honestly prefer to learn words by ear and start reading stuff with furigana asap, but will I be able to memorize jukugo at all that way, or the grind is inevitable?

What is jukugo ?

Although I know Hiragana and Katakana, I always mistake the K symbols

Wait until you learn 力 is also a kanji (in fact there is a small difference 力 カ)

Yeah, I know it's strength. I'm actually fine with the K hiraganas, it's mostly the katakanas who cause me problems

Oh...
I just see them as vocabulary personally and for vocab I just had a good base so I just look up for on dictionnary each time I don't know a word

I do too on rare occasions when the font is shit, so that's understandable. You usually get used to it if you see them enough. It's impressive how well you can adapt if you read enough.
For instance, SFC and DS games have extremely squished kanji, but you get used to it despite the lack of detail. It's probably a blessing and a curse I went for older games as my first real attempt at reading a non-trivial amount of nip. I could have cried at how much easier it was to read the PS2 games, and easier still when I get to the Switch/PC games.
