That's bullshit. I spent almost 20 years watching YGO and Sentai, and I can get the gist of most holos talking unless they have weird speech patterns (like Miko/Luna or Polka when she starts going off) or talk about really specific niche stuff like Botan. If it's a subject I already know about (like Pekora playing FF-X), I don't even need to properly pay attention and can keep up with it as background noise.
I'm just completely lost when it comes to written Japanese.

It really depends on the genre. If all you watch are fantasy action shonen animes, you'd most likely won't have any good vocabulary used in a normal conversation. Watch some slice-of-life or even sitcoms once in a while and you can have some amount of what is used in everyday conversation.

Spend like 2 weeks learning Hiragana. After the first week you'll already be able to read a lot of stuff and if that doesn't get you started, dunno what will. You already know a bunch of words and patterns from watching anime.

The bulk of the problem is reading/writing Kanji.
