Honest Opinion as a Holofag:

This was a good song. Great even, but it felt unoriginal even with English lyrics. I swear I've heard anime OPs that were the same as this one.

The lyrics - never did listen to it cause of the quality but I'll listen to the official ver in YT hours later

Voice - They sounded as if the JP girls are trying to sing in English. Marine level voice. A few meters deep to what's good eigo singing like Suisei.

Overall, if I had to compare it to HoloEN cover, this one was better but voice-wise, Gura was still carrying the whole EN even with the sound nerf in their video. I listened to the cover song again and can't help but close when the music starts up after Ina's part.

I don't know. It's really hard to get a gauge of it without knowing the personality of the chuubas. In fact I feel like it might have been a bad idea to listen to this before getting a good idea of their voices. R.I.P. worked out real well to establish the sort of character Mori wanted to portray way back in her debut, even if she changed a lot since then. Even as an idolfag myself, I can only really say it just feels rather generic and safe without knowing who the Nijis are which I guess you can argue that all idol music in general is like that, but that only really furthers my own point. I think it would've been better for them to have started out with individual songs that described their characters first, and then have this song later down the line or something.

First singer was good, 2nd and 3rd were a little flat. First Chorus hit was catchy and fun. The chorus is def the strongest part of the song, verses are ok at best. Track is pretty cool, I like violins and other strings in pop songs.
The chorus is mad fun actually. I'd put it on the same tier of fun idol pop like Polka's, Nene's, Marine's original songs. Fun songs and I enjoyed it, not playlist worthy with the verses being a bit weak.

As for the HoloEN cover of Country Roads, you can argue about the quality of it, but I think there was a certain reason why they chose that song in particular instead of making an original song. And in retrospect it actually kinda makes sense to release it now instead of when they recorded it they really should've rerecorded it though because of the trails and tribulations that the HoloEN girls have gone through these past months. NijiEN obviously don't have that yet, and perhaps down the line when they've gotten some experience in, this song of theirs will resonate a lot better with me, so I'm willing to give them the benefit of the doubt.

For covers you're on your own except if you're involved in something like prismatic colors/imagination. You can borrow ichikara studio to record your songs tho, or get assistance if you want to make a 3DMV.

Fow originals niji can hook you up with composers, etc. but other than that it's similar to covers.

Some make major debuts and become official artists contracted under Sony/Universal/Lantis. They get full benefits of being major label artists like TV ads, physical disks on major chains, getting onto Oricon, anime op/ed deals, etc.
