NTA, it's known as the Royal Road Progression, which is pretty common in Japanese music, especially animu/games. The chord progression, to me at least, resembles a complete story arc in a simple 4 chord progression (start, escalation, fall, climax). Works well with fast rock songs as the progression itself is naturally exciting.

Probably something like jazz where knowing music theory enhances it's enjoyment. You'll also enjoy someone like Jacob Collier if you have a good grasp of music theory, as it's pretty hard to appreciate his music without it. Something like math rock (tricot, toe) is also more enjoyable when you have a deeper understanding of tempo and rhythm. But in general, I appreciate all kinds of music more after I learned music theory.

For learning, I suggest picking an instrument that resonates the most with you. Or learn how to produce music digitally. IMO, learning the piano is the easiest if you want to solely learn music theory. Focus on having fun and play the music that you enjoy. Then, let your curiosity lead the way. There's tons of material for learning on the internet, especially YouTube. You can check out Chris Cornell, Adam Neely, 12tones, and plenty else for some bite-sized nuggets of information.
