I know you're asking this because of her AC streams from the past few months, and you have to consider two things in order to understand the reason behind it:

N°1: She's done them for comedic purposes, much like the WWE streams from last week.
N°2: In those streams, she sucked ass driving the cars (either accidentally or on purpose), cutting corners and torpedoing the AI cars.

Now, what if the IRL Pacific Racing car were having a terrible season so far out of these two rounds, getting DNFs or crashing out other racers in Super GT? Then it would most likely result in the SGT community going about mocking the team, and putting Miko as a reference of their terrible driving so far because it just so happen to be their racing queen. It's a smart move not having her on the car and instead having a set of the holos showcased on the car instead.
