I mean as a viewer there is only two main things to care about, (1) can they provide entertainment and (2) healthy long term work environment for your oshi.
On those two points (1) is subjective but could be somewhat quantified in getting game permissions and freedom/access in terms of collab partners. On both nijisanji is ahead because of the entire walled garden approach Hololive has, but again, its subjective, many fans might be a bigger fan of a smaller but more consistent group of collab partners.
In terms of work environment we have no clue, but personally I think the rapid expansion tactic from nijisanji is awful for the long term growth of individual livers that cannot get a quick and successful niche but its probably the most profitable for the company itself.

Hololive has better kayfabe. That's it. That's literally it. If you wanna live your fantasy about talking to an anime girl and feeling like they're anime girls, Hololive is your fucking game.

Compared to nijisanji where they actually act like normal streamers and normal people, which in itself its own appeal. Yeah, hololive gives a better feeling of immersion for people . Since they are watching people strutting anime avatars.

I personally prefer niji for the more organic interactions they have with each other and fans , but i can see why people gravitated towards holo more. People who wanted what niji provides is literally already watching streamers. people tune into anime to escape reality.

Futile thread OP but gonna give my .02 cents since I'm bored as fuck right now after ODing on Monster Rancher during the weekend.

Better at handling their business as an "actual business". Barring the last few months of stupidity (Yumenographia and the DLsite BS), they have very good business sense. Had the foresight to avoid the copyright BS that would later lead to the Holocaust. Was waaay ahead of anyone in terms of developing and shilling merch. Actually made proper use of their popular livers to create connections. JKgumi was already making anime cameos before Holoalt was even a twinkle in Yagoo's eye. Not to mention most of their livers are actually signed by labels (which may not be a good thing in the long run though). And is way ahead in terms of production values. The individual livers themselves may not be as popular as their Holo counterparts, but as a brand Nijisanji is still somewhat ahead of Hololive domestically. Overseas of course is a different matter. Their biggest flaw, however, is managing talent which is weird since they're the ones who actually have a visible legal department. They suck at hiring good talent. NijiJP hasn't had a breakout star in almost 2 years. NijiEN finally has one in Mysta and it took them 4 waves and 15 talents to get one. And no, regardless of what some delusional dragoons might think, Mysta is what an actual break out star looks like. Their other international banches are even worse off. NijiKR is dead without Bora. NijiID is stillborn because Hana decided to chase SJW clout. Raito and Meiro should have never been hired. And the way that they handled the Roa-Meiro drama is stupid. The Matsuri-Chammers Yab had more damaging potential and that shit got resolved without too much of an issue.

Insanely good at hiring talent and the right personnel. Sora and Fubuki may not have been as popular as Mito but they were the perfect building blocks for Hololive. Those two pretty much set the tone for the company's internal culture and all the unity shit. I'll give them a pass on hiring chris since this was literally gen 1 and I doubt they had that many applicants to choose from. Hired onion maid and Shuba for gen 2. FBK nepo'ed Gamers into Hololive but that ended up being a coup because doog. Almost all of Gen 3, Gen 4 had Coco. Gen 5 is kinda so-so but Botan is still a good mid-tier Holo not to mention Nene is kinda coming into her own. And then we have Gen 6. Laplus has Pekora level potential while the Orca is a real-life succubus that might rival Rushia in siphoning money from her gachis. Cover is also more open to taking risk business-wise (less so now, unfortuantely). Going all in on China when they saw that JP had limited growth potential for them at the time. Going all in on the EN market when no one was sure if it would be profitable. This however does bite them in the ass a lot (Taiwan Yab, Permissions, possibly HoloAlt as well). They also have insane levels of "falling ass first into first place" syndrome. Taiwan-Yab led them to a clean cut from China which helped them exit that market which would have been insanely hard otherwise. Even the permissions arc somehow ended up being a net positive for them since it ingrained them to publishers like Capcom (who was the main culprit for it ironically enough) and it also allowed the talent to be less formulaic in terms of content. Shit, i wouldn't be surprised if Yagoo and his dumbass somehow pioneers the fucking meteverse shit to be mainstream. With that said, Cover definitely sucks at actually being a business. Their merch took fucking forever to catch up to Nijisanji (they're still behind them in JP though), they're too conservative when it comes to capitalizing on their talent's popularity. And even now, they still depend way too much on lucky breaks. The talent really hard carries the company. Honestly though, if both companies somehow fused together while keeping all of their good points, I wouldn't be surprised if Vtubing became mainstream in the west.

Nijisanji and Hololive are simply agencies, and their parent companies aren't exactly rolling in billions of dollars or control a huge market. More importantly, the talent itself holds more power as an entity than the companies themselves. They could theoretically unionize and go on strike if they so felt inclined to it or simply leave at the end of their contract term and take their loyal fans with them and there's nothing that the companies could do about it.
