So I've never played a Mario Kart game but I played Crash Team Racing A TON as a kid/teenager, would I be able to beat most of Hololive almost instantly or is the game actually harder than it looks. I admit I don't understand all the meta of different karts, those gliders and I've never played the tracks but the skills look exactly the same as CTR and it doesn't even appear the game has any shortcuts on the level of CTR (or at least no one uses them). Like a lot of those shortcuts did require practice and skill and were a risk but any shortcuts in Mario Kart don't appear to require skill and are just obvious like cutting across the grass or whatever.

MK8 has the most simplistic shortcuts. Previous games let you skim across chunks of track similar to CTR. Most returning tracks had stuff like that cut.

But a lot of them are bad on a level that doesn't seem possible to lose to. I guess I'm asking, is the meta actually more serious than it looks? Like are my skills from CTR transferrable or is it actually noticeably more difficult to drive a bike vs. a cart or to pick the wrong glider, etc. I'm not pretending I could be world champion instantly but I just want to know if I'm wrong to have my mind blown at how bad they can be. Were games just easier when I was young and I've gotten out of touch? I thought the trend tended to go the other way (games becoming easier) but they really make the game look like it's a challenge.

If you're only watching the EN streams then it may seem like there are more simplistic shortcuts since they rarely bother to use them. However, MK8D does encourage the type of corner cutting and off-road boosting you'd see in CTR. If you watch prior hololive tournaments you can see that mushrooms and stars are the most valuable items to the top players because they offer the best way to shorten gaps and overtake other players while still requiring a decent amount of control. Also, some of the shortcuts that are more visible like the ones on DK Jungle and Twisted Mansion require players to know how to make more precise pre-emptive drifts.
