Undyne took more deaths from me for sure, but it also made me better at the game - it was a solid skillcheck that set the bar for later. I would still argue that Sans is, in a vacuum, harder than her. Her patterns are easier to learn and you have more options. That said - the one thing that's easier about Sans is that you can just ignore the attack minigame. I couldn't count the number of attacks I flubbed because I was too focused on getting to the next sequence against Undyne.
