See, I want to start watching Fate but I don’t know what adaptations should I get into. I have seen various recommendations:

Shirou in anime is not a good depiction of who he is. They make him look like an idiot that doesn't think (there's really only one scene in the VN where I think he's dumb). Play the VNs first and you'll see how amazing he is.

The only anime I haven't watched is the Deen anime, and I honestly didn't see him as an idiot in ubw and hf. Idealistic and naive, yes, but not an idiot. I have not read the vn, so this is just my speculation, but the only way it probably makes him "look less of an idiot" is that you have access to his thought process when he's doing "idiot stuff". He still does the same stuff there, right?

Just watch Unlimited Blade works, then Heaven's Feel, then Fate/Zero then it doesn't matter the order because the rest all take place in separate universes.

The VN is a good place to start with, and I suggest checking out the Heaven's Feel movies once you're done with it. They're good as highlight reels of the most hype moments in the route because of Ufotable's infinite budget.
Make sure to check out Fate/Hollow Ataraxia as well. If you enjoy F/SN's cast then you're gonna have fun with some of the SoL scenes, and if you don't (like me), then the main story involving Bazett and her servant is still amazing. I actually heavily dislike a good portion of Hollow Ataraxia because I thought it was incredibly boring. The main story carries the FUCK out of that VN in my opinion, with the ending being one of my favorite endings of any VN I've ever read.
You can also get into the other Nasuverse titles like Kara no Kyoukai and Mahoyo (which is my favorite thing written by Nasu) since they have some connections to Fate.
