You CAN solo MH, but if you're intimidated by the other action games you see Biboo play, MH can get a lot worse in that regard.
She's basically only faffed around in early game against weaker early enemies in every MH stream since she's always restarting, lategame solo MH will still have you dying in 2-3 hits or fewer and having to fight a monster for much longer than HK or Fromsoft challenges without significantly fucking up, and with sometimes more poorly-defined hitboxes and messier arenas than in her other challenges.
With that said, there's also no need to solo the game just because Biboo's been doing it on and off, it's built around multiplayer and rolling with randoms. Planning an actual build and being prepared (which she's generally completely neglected in favor of just winging it and punching things) can also make things a lot easier in MonHun for a while, if you like that sort of gameplay instead of being a gorilla like Beebs.

As for difficulty, it can be hard but it also depends on your weapon choice. Theres some weapons that are on the technical side like the one Biboo is playing (CB).
CB, IG, GS and GL are on the harder side and would be a challenge for a first timer
Long sword, Hammer, Lance, Dual Blades, Sword and Shield and all 3 ranged weapons are on the easier side and they're all good weapons.
