The trick is to not bother with hot food. Cold-cut tortilla wraps can be made at scale quickly, look presentable, and serving that with some pre-packaged chips, water/soda bottles, and sauce packets is a reasonable facsimile of a meal with some amount of choice available. Though, I shouldn't be surprised that the only con I've been to that had its food logistics up to the task was one sponsored by Amazon.
