You're sadly (both for me and for you) talking to someone who played a lot of Ubi open worlds and I can very confidently say their and Zelda's open world and open world quest design is not similar at all, aside from both having towers. Simply put Ubi open worlds are pretty, but there's not much to do or explore, they're empty, meanwhile Botw is a sandbox with a lot of organic puzzles scattered around the map.

You're right in principle, but there's more to it in practice as a product. A game is a set of systems polished with art. If there's too much deviation from the known set of systems too fast, it no longer feels related, even if the art assets are on point. Loving the gameplay is as valid as loving the characters, world, and art.

SMRPG is actually a great example of how to avoid that pitfall. If it was called Super Mario Bros 4, people would have been pissed. By calling it RPG, they declare from the outset that it's a deviation, and might not be "a good Mario game." Final Fantasy and Mega Man handled it similarly, by making radical deviations explicit side games or new subseries. Zelda on the other hand doesn't have as much separation, for whatever reason.
