they tried to take over Hololive in its entirety. Hololive jp had grown too big outside of complete chinese control to ignore. There was barely any outrage chen choco mentioned tibet on a stream. She just decided to never stream on bilibili anymore and that was that.

I'm not an expert, but from what I understand a lot of China's attitude goes back to the period of time referred to as the century of humiliation when China was essentially colonized by various powers. Part of this included various parts of China being directly controlled by western powers like Hong Kong. After WWII China has wanted to return to being the kind of world power (or as close to it as nations could be at the time) it had been historically. Taiwan being independent can be seen as a threat to that image of power.
Also, in my opinion China is not necessarily willing to start a war over Taiwan, but being perceived as being able and willing to makes peaceful reunification under their terms more likely and it makes for a convenient distraction for the population and to get nationalists energized. The way the US also sort of agrees with China controlling Taiwan makes China seem more powerful since the US can be depicted as relenting to China's influence, although it should be noted that pretty much everything the US says about Taiwan is double speak so that they can appear to agree with China while still supporting Taiwan. An example of this is how the US "acknowledges" Chinas claim over Taiwan but never explicitly considers it part of China.
