I've been thinking about getting into vtubing but I want to do IRL content like painting and sewing, but I'm not sure if the presense of human hands will break the immersion.

What are your guys thoughts on hands or even full body except the head?

I tried watching a few hand streamers and the only one that I felt didn't break the immersion was Onigiri's cooking streams.
On most of the others though I felt that the moment I see the hands moving about, the vtuber model just feels like.. just a model, it doesn't feel like a living breathing character anymore. But maybe that's just me

It doesn't make any difference to me in terms of immersion. But I approve of gloves, not because of an immersion effect, but because it's another layer of privacy. The odds are extremely low, but your hand could potentially give away who you are to people that know you irl, moreover if you combine it with other factors like voice.
I also gotta admit that I've grown to like gloved hands.

Gloves are unironically to hide rings and ring marks and I don't even mean that in an anti way. It's not a secret that some corpos have vtubers who are married, it's not a secret that showing a wedding ring on stream is about 99% of the time a terrible idea, and if you've worn a ring for several years yourself you know that you can't just take it off for an afternoon and have people not notice the mark. Making everyone wear gloves is the only real way to disguise it.
