A lot of vtubers and vtuber fans don't really sit and think critically about the psychology of what's happening. It's all subtle, a lot of it subconscious. Most viewers don't think of themselves as "deranged unicorns", and most would probably claim that they don't care if their oshi has a boyfriend. But if they found out, it would change things. They'd lose interest and fade away as viewers.
I think that vtubers, for men, are often basically "young available cute woman spending time with you simulator", not necessarily exactly GFE. The concept is soothing to your monkey brain that's constantly sitting in the back of your head screaming at you to go find a mate. Once you know for certain that she has a boyfriend, that pleasant illusion is shattered and you lose interest (without consciously knowing why).
that's why all of these girls don't disclose details about their personal lives. They're providing a little bit of escapist entertainment, a pleasant mutual illusion.
