The rebuilds past 1.0 are essentially canon fan fiction, pretty much all of the characters are unrecognizable as their old counterparts and all of the stuff that made Eva feel meaningful beyond just a fun watch was mostly stripped away for marketing, though I have to say that I didn't even get all the way through 3.0 let alone watch 4.0 so maybe it stops being trashy at some point.

I don't think she is that special in this regard. Game commentary is easier to understand than zatsudan, and calm talk is easier than fast and exited. Old Japan-specific stuff might be hard to properly understand, but she doesn't talk about it that often and context usually enough to get a grip of it.

I didn't had much motivation to begin with, and ever since I got good enough at listening to understand about 80% of typical stream, I don't have much will to progress, even though I can't even read half of basic N5-level kanji.

Immersion is the way to progress on intermediate level, but effectiveness of it depends on how far you managed to go with studding basics. Ultimately ineffective way would be just start listening to raw stuff with zero background and deduce entire grammar and words from context.
So learn as much grammar and dictionary as you can by normal studying and then keep consuming raw content you're interested in, even if you don't understand much. Don't think about it as making progress, as it will be quite slow compared to conventional methods. It could be compared to living in unfinished house, because it's better than having no roof fora few years needed to get it 100% done.
Chuubas who speak both or often switch languages would be a good start.

You get better at what you deliberately practice, if all you need is listening comprehension and not vocab (though judging from what you said what you need is probably a ton of vocab) the most intensive way you can do it is by getting the migaku mpv plugin or putting in the toggle yourself where you can press w to hide subtitles and then you listen to a line, try to repeat what was said in your head, then hit w to reveal subs and check your work, do like 10 minutes of that a day and you'll start getting 98% of the way there pretty damn fast
