For example, her Among Us streams used to get 150K+ views and now are in the 150K- views, but that could be attributed to maybe the game not being as popular as before.

I don't think numberfagging will ever completely go away because at its core it's an indicator of how much other appreciate the work you put and she really wants people to at least give her a chance. On the fps thing, I know she said she doesn't like them, but I feel that's maybe just a self-imposed kneejerk reaction like she maybe tried one years ago for 15 minutes, got rekt, concluded "this is not for me", went back to her usual jrpg comfort food and never touched the genre again. But seeing as how much fun she seemed to have in the few games with shooter segments she played thus far (I know it's just A Way Out and It Takes Two thus far but whatever helps to get eased in) I think there's something there. Pretty much any FPS/RPG then, the System/Bio Shocks, Deus Ex, Dishonored, the Elder Scroll games. These have the benefit of letting her melee if she prefers. I think the new Prey would work, it's light on combat and has a good narrative. It is scary, but most are scarier and more difficult. For 3rd person, maybe the Mass Effect games?

There's tons of these. Portal is obvious. The Witness, NaissanceE (sorta), The Room, the Myst games, AntiChamber, Outer Wilds, Obra Dinn, Supraland. Cover also just got permissions to the We Were Here games, that could work as a TakaMori collab. I don't think she'd be too into puzzle games in general, though.

Anyways, they don't really fit either of your criteria but I think something like Slime Rancher could work, or Satisfactory. Slime Factory can be played by kids and is bright and colorful, but also has a fun gameplay loop. Satisfactory isn't combat focused either, and is similar to Minecraft so it might be good for her too.
