Seeing a single woman of your own liking with another man will raise jealousy in a notable part of men—maybe even all of them with adequate testosterone levels—which itself goes directly against the dream they are trying to sell. If watching your oshi gets you riled up and prepared for competition with another man, that's directly against what a (virtual) idol is supposed to sell. It's directly against what's good for their service.
It impedes pure enjoyment since it aggravates men. It's simply not fun or enjoyable. Many will simply abandon the idol entirely and brand them a whore, because the idea and feeling of competition is too much in context.

Of course, as an industry inspired by idols, they must be aware of all this, so collabs ought to be minimized and even inexistent for many.

The human brain is incapable of such nuance. It's not a rational process, but the monkey brain reacting to visual stimuli.
It's a simple reaction to seeing a girl you like (even a little) being close to another man. It sets off biological functions in your body which are meant to prepare you for competing with that other male, but when watching vtubers will only serve to sour the experience for you. It's not like you can fight them over the internet and ooga-booga your way into proving you are the superior male, after all. You're just stuck there acknowledging something unpleasant is occuring and there's NOTHING you can do about it. It's no wonder so many people react badly to it. Any decent streamer of the idol/gfe/male-appealing/whatever sort will understand this dynamic and just avoid males completely when streaming.
Interestingly enough, I've seen many people say this reaction doesn't occur when they know the streamer is married.
