It's not an untapped market, it's a non-existing one. The Western vtuber scene isn't some new thing that popped up after holoEN, it's been around for years and there's overwhelming evidence that no one actually wants men over here.
The most popular men over here across the board are people who were famous before becoming vtubers first, then guys playing waifus, not just regular babinikus but dudes selling the GFE.

The thing is that these guys with huge previous lives actually do worse than girls who debut with half of their fanbase. It's counterintuitive but it's probably easier for Japanese to do that kind of ambiguous gender thing and say fuck all the rules. Japan is much more conservative, but the language doesn't have a lot of third person pronouns, and it has a lot of context-dependence and ambiguities built in. So someone being gender non-conforming doesn't get hit with a constant stream of "him" and "she" to remind them what box people assume they fit into.
