Ideas that come to my mind:
- metal head/singer
- someone with a well funded knowledge on idol groups, jpop or jrock (there are some big chuubas into idol culture like Kiara or Pomu and many others fond of becoming/being one too, but as far as I know none of them actively engage into the topic beyond surface level)
- someone who's deep into RPG / tabletop / DnD shit

Admittingly there are probably some small indies out there who would fit into these categories, but I'm surprised that there's no one with a decent following, say minimum mid-size start up level, who could fill any of these niches. These things are all popular to varying degrees within the weeb community and would make a decent distinguished selling point next to your standard off the shelf vtuber.

Generally I feel within the bunch of more popular vtubers, there aren't many that really stand out of the mass with their interests, who could draw inspiration from there for more specialized content.
