The key to good looking buildings isn't a scale, its depth. With all blocks being 1mx1m cubes, it's hard to have depth. People tend to build large because those 1m cubes become smaller when used in a 200x200 building as opposed to a 20x20. This allows them to use them to create details not otherwise possible.

But there are ways around it and it's possible to create a huge amount of depth in small spaces. If you have a 5x5 flat wall, replace all of the center blocks with walls instead. You've now added a second layer of depth to a single 1x5x5 wall. You can then extend this idea again by making the inner 3x3 a slightly darker shade, say deepslate walls instead of stone brick. This gives the illusion of shading and a third dimension of depth to the same 1x5x5 wall.
