As a medium for absorbing flavor and heat transfer, refined seed oils aren't (functionally) so bad. They all come from random oil-bearing plants and need to be refined to be flavorless. Canola is a brand-name rapeseed oil, it's one of the "seed oils," and others are stuff like basedbean, sunflower, corn oil, grapeseed, etc. Any recipe from Asia that involves high heat and a wok really intends for you to just use cheap vegetable oil, and it's the easiest and cheapest way to buy big amounts of oil for frying.

Your other options are slightly more natural stuff like olive oil, peanut, coconut, tea nut, sesame seed, etc. These have a more pronounced flavor which is great for certain foods, and if you get them from a good source, they don't have as serious of health risks. The downside is that they're more volatile and tend to burn when used for steaks or frying, etc. which nullifies any theoretical health benefit and may result in a much worse taste. They're also expensive and massive overkill when you need oil to just be functional and you're not making some authentic Old World dish. Functionally, peanut oil is your best bet for frying stuff and it tastes pretty good, but people like to use olive oil for anything like salad dressings or roasted vegetables where it's not going straight into the fire.

Of course, plant-based foods are never going to be that good for you. If you can source them, lard (pig fat) and tallow (cow fat) are great for frying, but they're solid at room temperature and are no good for sauces and stuff. They're a lot more uncommon and expensive than they used to be though. These benefits also extend to butter, which tastes by far the best out of anything, but it also burns the easiest which is slightly limiting.

Butter is best, but olive oil is more retard-proof. Women like olive oil for the healthy associations, cooks like butter for the objective superiority. Anything is good though, but you may feel a bit self-conscious buying basedbean oil when you could have spend a couple bucks more and gotten peanut.
