They're separate from bits and you just use them on these things listed here. Mel has basically nothing available for her and she's mentioned she's regretted that cause if she puts anything interesting there now there's people with a half a million points accumulated that can spam whatever she puts there. They're just small extras that you get for watching (And if you use the BetterTTV addon they'll be accepted automatically when they're available so you don't have to notice + click every 5 minutes)

And a posture check is just what it sounds like. If the streamer is slouching then they'll be like aw shit and make sure they're sitting up straight if someone redeems it to remind them.
