Then check out some Youtube tutorials of some popular artist channels explaining how they do it.

Also a disclaimer; do not take it for granted that only anime girls/boys with animal features are a thing, because they are the most popular, think outside the box, there is more room for moe-anthropomorphism based on things such as weapons and ships like gacha games do it, furries, non-humanoids, eldritch abomination, flying hamburgers and everything in between.
Just because you are maybe a straight guy, you don't need to be an anime version of yourself in a hoodie as vtuber avatar, you can be literally everything if you ignore fame and trends. This is the monkey paw catch everyone has to pay who is doing their own thing.
