In the webm Sonic uses the speed from the spindash while going uphill to jump higher and skip part of the level.
This is also a thing in the Classic games. A good example is webm related where you can skip the dreaded water segment of chemical plant by making good use of slopes and momentum.
I just want to make clear that I'm not saying Adventure doesn't have jank. I just think a lot of people are unfair with their criticism at times.
