i don't think theres a specific name for it but its something like contour lines and is really easy to understand, if you look at this pic is easy to get it, basically be able to visualise forms to get a 3D mental image of it.

For example drawing a countour line on a box is easy as fuck because everyone knows how does a box looks like, the next example is something similar to a box but still fairly easy and you can visualise the countour line even if is flipped, now applying this to a leg you can get useful land marks, as you can see the knee is not aligned in the center of the leg is kinda close to inner leg, and so on with the other countour lines, in the rectangle box i used these countour lines as landmarks to construct a leg, technically speaking if you use the data correctly you can get a 100% accurate drawing but is not something you should obsess with, the point is being able to visualise these forms on your mind, those circles and axis i drew on the pic you posted are contour lines and landmarks, like the contour line on the pelvis, also is easy to show forms in that way if you want to redline something, so they are just the end result of that lol.

i used a pic from here as an example in the bottom drawing, as you can see you cant see the thigh even though the knee is looking directly at the viewer, from that angle it should be seen. these kind of things are really easy to spot and draw once you start thinking in this way, all you need is a anatomy book wit tons of different angles, the rest is just practice, really tedious and boring desu. if you just eye ball everything and you also have poor anatomy knowledge it's going to end like shit even doing simple stuff like you said you are just guessing, knowing anatomy is just the first step.
