Youtube not having a bitrate limit doesn't matter that much, because Youtube re-encodes everything on their Google server farms into their own format and bitrate before sending it to viewers. For example, Youtube's "1080p" setting is approximately 2.5k bps, no matter what the streamer is sending to them. Twitch needs a bitrate limit because they re-send to viewers whatever the streamer sends to them, that's why their setting is called "1080p (source)", it's the source video data.

tldr Youtube crushes everything, a higher bitrate doesn't mean a higher quality, it just means more for Youtube to crush
