TH15 - Legacy of Lunatic Kingdom: Inspired by IWBTG, that should tell you all you need to know. Pointdevice mode is fun if you don't softlock yourself at the end by spending your bombs (only game where over-spending bombs is really an issue). You'll need a strong will to get through it, but you can take it as slow as you want. Expect lots of skill checks and puzzles.
TH16 - Hidden Star in Four Seasons: Very lopsided, boring early game and hard as balls late game. Unique gimmick is also controllable/beneficial, so use it well.
TH17 - Wily Beast & Weakest Creature: Pretty easy and has an interesting gimmick similar to TH12's. Also a good beginner game.
TH18 - Unconnected Marketeers: Hard, but has by far the most malleable gimmick in the series. Invites experimentation. Lots to discover, no 2 playthrough is the same.
TH19 - Unfinished Dream of All Living Ghost: PvP game (with story mode). Has many issues but the campaign story is really interesting and it's fun to play with friends.
Games that natively support spell practice: TH8, TH13, TH14, TH16, TH17, TH18
Don't bother with PC-98 games, keep them for later. I strongly recommend against going in chronological order.

TH9.5 - Shoot the Bullet: Camera scene game. Relaxing, filled with puzzles and familiar characters.
TH12.5 - Double Spoiler: Camera scene game. Same as above, a bit easier overall but has more content.
TH12.8 - Great Fairy War: Token Cirno game. Short, fun, extremely unique playstyle, but requires pretty heavy routing.
TH14.3 - Impossible Spell Card: Woops! All puzzles. Extremely interesting but hard to describe without spoiling.
TH16.5 - Violet Detector: Controversial, a bit rushed, a bit easy. Can be fun to try out while you're still at a casual level.
TH18.5 - Hundredth Black Market: Similar description as above, but this one's a roguelike.

You can buy the games on Steam, but getting all of them costs way too much, especially if you're just trying to find what you like (demos are free to try but only have 3 stages out of 6).
Alternatively, pirate the games on Moriya Shrine. Every 2hu game download on MS comes with its own installation of thcrap (the patching tool used for the English patch), you'll likely want to delete it and have a central thcrap installation instead. Don't let people know you've pirated them, and try to avoid streaming ending screens as it goes against ZUN's wishes.
