I think it's just that people's subjective tastes have been influenced by the female dominated vtuber-sphere or just latent autogynephilia.
Epic seven has really good live2d male characters imo. I really hate pic rel's guts, but his design looks good, better than many female vtubers. I also saw a male grim reaper vtuber with a similar color scheme on Twitter and his model looked good.
