it's better to pick one who you like but harder to understand than the one that is easy to understand but you don't like him or his streams since you might just give up and stop watching a week later.
might be better for you to ask "who should i watch based on my interests/tastes" and we can see who to recommend you.
for me i like aruran's streams and i think he speaks quite clearly, i basically leveled up my listening from EOP tier to around understanding 50% of the stream just watching his late night minecraft streams he used to do back in the day.
for speaking you might want to shadow while you watch them, or i don't think you will be able to pick up the speaking pattern
