There is an aspect of "cute anime girl/boy playing vidya" to it, but also I the atmosphere of Vtuber streams tend to be a bit...different I suppose? they tend to be more cosy and intimate feeling then your average "GamerGod88" Twitch streamer. In the case of Hololive, Nijisanji, and other significantly sized Vtuber groups, part of the fun is seeing them interact with each other as a big group. Some V-tubers also sort of lean into a character which helps to make the streams feel different to none vtuber streams, even if you tend to only listen to audio (which is what I tend to do).

Apart from that, it has the sort of "Dwarf Fortress, Team Fortress, Touhou" thing around it in that there's a huge community that surrounds the fanbase that creates memes and acts as a large facet of the experience in itself.
