Both are equally important.
Having a niche is great because it's fool-proof and you can always bounce back if you don't know what to do.
But playing whatever is also great for keeping things fresh, don't burning out yourself and there's always the chance to struck gold and play something that will garner a lot of new viewers. There's still a lot of untapped market and you never know when you'll find a game both you and your viewers will enjoy.
