I'll break it down by genre.
>Platformers
Kirby Super Star, Super Mario World 1-2, Mega Man X-X3, Donkey Kong Country 1-3, Demon's Crest, Super Metroid, Aladdin, B.O.B., Tiny Toon Adventures: Buster Busts Loose!, pretty much all the Mickey Mouse games except Mickey Mania, The Legend of the Mystical Ninja, The Addams Family, Super Castlevania 4, and Castlevania Dracula X are all very enjoyable platformers with good controls, level design, and fantastic gameplay.
>Racing/Sports
F-Zero, Super Mario Kart, Bassin's Black Bass With Hank Parker, Uniracers, Top Gear/3000, Ken Griffey Jr. Presents Major League Baseball, Bass Masters Classic: Pro Edition, and Tecmo Super Bowl series are all immensely enjoyable racing/sports games even for people who aren't really into the genres. NBA Jam not mentioned since the arcade version is superior.
>Run'n'gun
Zombies Ate My Neighbors, Pocky and Rocky 1 and 2, Soldiers of Fortune, Sunset Riders, and True Lies are tons of fun.
>Shoot em up
Starfox 1 and 2, if you have them modified and overclocked for far better performance, the rest are better in the arcade.
>Beat em up
None, the best ones are still poor arcade ports. Play the arcade originals.
>RPG
Legend of Zelda:A Link to the Past, Chrono Trigger, Final Fantasy 4-6, Secret of Mana, Brain Lord, Soul Blazer, Gunman's Proof, Illusion of Gaia, Earthbound, Terranigma, Alcahest, Tales of Phantasia, and Robotrek are probably some of the most enjoyable RPGs in terms of the gameplay.
>Strategy/Simulation
Pilotwings, Actraiser, and SimCity are the only with really good gameplay, the rest all suffer from varying degrees of clunkyness and general user unfriendlyness, or are much better enjoyed as the computer originals.
>Fighting
None, the best ones are still poor arcade ports. Play the arcade originals.

Panel de Pon is a rare game that is perfectly designed.
You can teach a child how to play it in less than a minute, and you can spend your whole life playing it without truly mastering it.
Barring the visually impaired, I have difficulty imagining a type of human being would not enjoy playing this game. It's like Tetris but more intense and more fun and with more ways to play.
10/10 fucking masterpiece, I love this game so much.

My family loves this game, we still get out the SNES and play it when everyone gets together for Christmas. But as one of the many dudes with colorblindness it's rough, since the colors don't "pop" for me I have to manually scan around for shapes to match which is clearly slower. The only way I've found to have a chance against my sister and dad is to have the game speed cranked up stupidly high so they don't have time to plan cascading combos with which to bury me.
It's a shame, truly a magnificent game.

Yep. Had it as a kid, then the pokemon ones and imported puzzle collection on the cube back in day.
