Go Swords or Boomerang for Eight.
Go Axes or Scythes for Angus, fuck hammers.
Go Whips or Staves for Jessica.
Swords or bows is fine for the silver haired guy whose name eludes me right now.

As that other anon mentioned there's a good place to grind metal slimes around level 15 that's before the church, if you went axes with Angus you can easily Helm Splitter to kill them with crits for easy levelling early on.
Once you get the ability to form a monster team, go look for a large bipedal lizardman called "Hackzilla" that's north of the first town and a brick golem called "Brickman" who's wandering around the north west portion of the Southeast continent. They're the best monsters you can recruit early and with no ranking, and will easily carry you a decent way through the monster arena and generally help out with bosses for a decent while.
If you obsessively collect mini medals, you can have just enough to early a bunnygirl outfit for Jessica at the first chance you have to cash them in.
About halfway through the game you come across a casino, once you've progressed the story a little more and unlocked the ability to gamble there then if you like you can savescum betting until you can buy Jessica's ultimate whip and some great swords. Keep in mind this will pretty much trivialize combat for the next few hours, Jessica will be oneshotting entire groups of monsters by herself for a fair while with it with little effort.
Consider playing the 3DS remake of the game that has additional endgame content, a new super dungeon, and an alternate secret ending among other things. Downside is that Jessica's outfits have some censoring done to them, but you can uncensor them with a fan made patch if you like and I'd recommend.

It's long been my favourite JRPG of all time, would recommend.

I will say though that I do like that it does something pretty unique for a DQ game: lets you have an actual choice about something plot related.

I played this on release and dropped it about 40 hours in when I was bored as fuck and looked up a guide and saw I wasn't even half through the game.
This summer I tried DQ11 and dropped it after 60 hours, and apparently wasn't even 1/3rd through.
The games are fun for about 20-30 hours, then you just wait for the game to add anything interesting mechanically which they never do, while intentionally wasting all your time under the guide of being "massive" and they're just such a fucking drag to play.

The 3DS version includes a new character, lots of new character interactions, 2 new endings, new enemies, new skills, new weapons/armours, lots of collectables (that constantly reward you with great stuff through the entire game) and a lot of extended content, not including the post game adventures (which fleshes out the main character's backstory) and an extra dungeon with crazy difficult versions of bosses that will force you to fight wisely because they still can massacre your group even if you maxed out their levels.
Fortunately, the 3DS version also allows you to skip grinding by simply throwing you lots of zones where you can easily hunt and kill metal slimes for some crazy quick leveling up if you know how to do it.

But even if DQ5 hero suffered a lot he can take solace in the fact that he still played a massive part in saving the world despite not being the legendary hero, he gets his own kingdom and on top of that he gets two (potentially) OP children and heirs to the throne while he and his wife retained much of their own youth due to being statues. Dude endured through hell but he's set for life once the story is over.

There's also some A+ storytelling going on, where everything at the end wraps back to the beginning. The hero ultimately avenges his dad's death and fulfills his last wish because he BECOMES his father, he finds the legendary hero his father was looking for once HE becomes a father himself. The last chapter of the game is the father and his heroic son just as the beginning was the father and his son who we all thought was the hero.
