DEFINITIVE VERSIONS OF THE FIRST SIX FINAL FANTASIES AS OF SEPEMBER 2021 but let's be honest this isn't changing anytime soon

I&II - WonderSwan Color, PlayStation (just enough modernizing with the least amount of compromising)
III - Famicom, PR (this is currently the only Pixel Remaster that's an acceptable alternative due to slim pickings and the 3D version really just being that insufferable)
IV - PSP, DS (what can I say, I'm just as shocked that there are not one but two decent remakes for once)
V - SNES, GBA (the latter suffers from the usual handheld quirks but can be mitigated with patches, though mileage may vary if the official translation goes a bit far in a few places)
VI - SNES, T-Edition (the latter is an unofficial Japanese hack but it makes GBA obsolete)

Of course, when in doubt, just play the originals as it can be daunting to keep track of these if you're just getting into classic Final Fantasy, you're really not missing much for the most part if you lose out on extra content.

tldr, the Pixel Remasters look okay at first but it soon becomes apparent if you've played earlier versions that they do too much under the hood, like FFI keeping the magic-breaking GBA items, FFII basically overhauling the entire battle system, and FFIII getting rid of class change limitations altogether (making it very easy to cheese level-up stats), among many, many other changes that amount to keeping the difficulty totally Normie-friendly. ...No? No, the Capacity amounts scale up as you progress through the original game, and you'll not want to go back to lower classes. It's meant to prevent you from doing scummy stuff like switching to a higher VIT class before level-up or simply switching to a physical class once you run out of MP. Even if the 3D version had a worse system, that's no reason to throw out all safeguards against this in the Pixel Remaster, which should've even be paying the DS version any mind at all.

Speaking about the first two Pixel Remasters (have not yet tried the fourth): they aren't really the return to form they've been marketed as. Not just in terms of gameplay mechanics, but also graphically. It's a very weird, not-at-all-cohesive hodge-podge of previous versions in a blender. Most of the overworld and background assets are dated from the WSC style, but they're the worst thing to happen that those original assets since the darkened/stretched PSX versions because they're based on the GBA versions that saturate all the colors and details to ridiculous levels (even the PSP versions were based on GBA palette for no good reason). On top of that, the newer sprites were clearly made without this in mind (obviously, since they seem to have first been made for an art book years ago) and so they feel out of place and overall don't feel like they belong in these environments. The monster sprites are a weird mix of sometimes-recolored GBA sprites and new ones based on the NES sprites, but the latter's quality is all over the place: just look at Lich and Gargoyle's eye, final Emperor's face, or Dullahan's head. In some cases, the PSP versions are closer to the NES poses, such as Astos and Chaos. And in other cases, the Pixel Remaster is missing the point (see pic). Final Fantasy III suffers the least due to there being no other finished 2D remake and the 8-bit monster sprites being good enough to have shading drawn over them, but the first two really set the expectations for the rest of the lineup, so the bottom line is this: calling them "Pixel Remasters" is a sham.

The only stat that is effective permanently by changing classes is hp anyway. A level 50 warrior will always have the same strength/wis/agi/wil/vit no matter what jobs they previously used. In the pr edition the hp values don't seem to work in a reliable way. I remember seeing people post screenshots of their party with 1000+hp discrepancies through the party where I think my black belt only had around 600 more hp than everyone else.

If that's true and this version just werks then this and DS might end up as the most legit versions out there in case you don't wanna step into the glorified NES UI of the original, though idk if there's any mods that make it better in that case SNES IV would end up like VI and you're better off just emulating with fanmade tweaks.

I'm just curious because I've played both the original US release and DS and I wonder if this would actually work as a middle ground with just "patching" the game but not revamping everything about it since I like it a lot but it's harder than it should be to recommend it to someone when every release is so different in graphics or ruins the gameplay with a broken ATB (DS version made me realize how important it actually is, I remember even IX on the PS1 feeling quite wonky in comparison). In the SNES version, the Bomb summon only drops from Ballons and Grenades. I don't know about Pixel Remaster. But if it's the same, that means either Upper Bab-il or the Lunar surface (including the caves iirc).

And looking at Encounter rates, there are Tower of Bab-il B1 looks like the best odds of getting a Bomb drop. There are two encounters with Balloons, a 3 Balloon battle with a 16% chance and a 4 balloon battle with a 12% chance.
B2 has a 16% chance of 4 balloons and 12% chance of 2 balloons and b4 has 16% for 3 and 12% for 3. Pretty sure the math works out that B1 is the best odds.

Lunar surface has only one 16% encounter with 2 Balloons + 2 Grenades. The first lunar passage also has the same chance. the second lunar passage does not have any at all.

In 1992 I didn't have a lot of RPGs to play. I even tried to grind for the Adamant armor (which is ridiculous without using sirens, which I didn't have in the US version).
The bomb summon is basically a single-target version of the Mist Dragon. Its damage formula is based on the caster's hitpoints. It's theoretically useful against the CPU boss, if you don't have the Sylph summon yet, and on anything where you want to save some mana. (Most of the time, Virus will be a better choice for a single target enemy, though)

I don't think it is, at least the PS1 version. The Pixel Remaster has got too much going on for what's supposed to be a overworld map theme, and loses the understated yet bold meloncholy bleakness of the older versions in favor of morphing into a more typical fit of whimsical instrumentation. Maybe the arrangement would work better as part of a new opening or something, but in general I'm not a fan of the Pixel Remaster looping (FFIII map being an exception). I'm sure a more qualified music theorist might be able to explain it better.
