As >>7033325 said, Quackshot is the best one.
If you don't mind Mickey, World of Illusion is a pretty good Donald Duck game too, albeit short and easy.
As much as I love Donald Duck in Maui Mallard/Cold Shadow, it has the same problem found in games like Earthworm Jim and some Disney titles made by Virgin: fluid animation comes first, polished gameplay comes later. There's a certain part in "The Sacrifice of Maui"(Genesis and PC versions)where the developers put a very reachable extra life because they knew that Maui's staff had bad hitboxes.
If you still want to play it, go for the Windows version. It's the best of the bunch. If you don't like PC gaming or are too lazy to install the game, just play the Sega Genesis version instead.
The Super Nintendo version is a very nice(and really pretty)curiosity, but lacks many things that make the other versions good. The Game Boy port is pure garbage, though. Avoid it.
It's been a long time since I played Going Quackers, but I think there was some big differences between the PS1, N64 and PS2 versions.

Basically, if it's either Sega or Capcom, it's good.
Magical Quest 3 is a great co-op game (I personally like it more than World of Illusion), highly recommended.

Just played through maui mallard md for the first time in forever. Wonky hitboxes really become hell in the last couple of stages when the devs suddenly decide to punish you with bottomless pits at the first mistake.

Yeah in terms of sound design the Capcom games on SNES had the obvious edge, however the Sega Disney games have ultra comfy and certified SOUL soundtracks.
