The fact that you ask this question is already a sign that you probably will, most people just straight up jump into the genre and pick up some bullethell game made for veterans, and then have a miserable time because the initial learning curve is so incredibly steep.

Personally, not retro but Sine Mora EX is probably the best forgiving shmup that I can recommend, incredibly cheap to pick up, very unique artstyle, has traces of bullethell but isn't punishing if you fuck them up, and it lets you pick stages so you can quickly memorize and learn stages, to then directly apply your knowledge to progress. It teaches you what shmups are about, provides every challenge you can expect in other games, and dying feels fair and part of the experienfe. If I play it now I breeze through it, but when I played it it took me a full day to finish and several breaks because I was so invested.

Darius after you get a taste for them is a great series, not easy but not ridiculously punishing either, also has several parodies called Parodius, so it's a series that can be played and learned for a while.

Deathsmiles is a western shmup for the 360 clearly made to appeal to western audiences that don't have muxh experience with shmups, your hitbox is very clearly defined, it has very clear cut layouts that it walks you through to help you figure out your playstyle.
Deathsmiles will walk you down a very ridiculously expensive and hard to justify path if you get into it though, since Japan had a ton of very good Japan exclusive 360 games.

Try Deathsmiles. Very begginer friendly. It was my first 1cc. Dont worry about slow down and shit for now. Once you get gud and are sure you are going to enjoy it then you can dive deeper. A arcade stick is nice too but not necessary. Many great players use gamepads or keyboards.

Gradius and RType are also great series to start with if you like that style better.

Then you either didn't try very hard which is likely, or you picked level 3 for every stage and got spanked by the increased difficulty. If you're picking level 1 and still struggling then you're doing something very wrong. There's a pretty decent beginners guide on steam that should make things easier, and a "newbie route" that'll make sure you get a lot of health items and extends

Some do some don't, even those that do often mix it up. There's players like Kiwi who tore Blue Revoler apart with a subweapon type that no one used then went on to do the same with Devil Engine, a new game. Iconoclast crushed Ketsui's Black Label mode which was completely new at the time in between copying routes. Jaimers' plays kusoge no one takes seriously. Vast majority of players won't need to copy because they play for 1cc's, anyway.

I generally agrea with this but dont let not having a stick stop you from playing. Some people just dont like them. Get a good one though. A cheap one will make you feel retarded. I first got a cheap Injustice Fightstick and the stick sucks. Its mushy and doesnt snap back well so it makes fine movements almost impossible.

Building one is an option too. Plenty of resources online for this. Just use good components. If you can find something cheap, you may can upgrade the stick and buttons into something good but check around online to make sure it doesnt take a lot of complicated modding. Some can be as easy as just bolting in new seimitsu or sanwa.

Scoring need not refer only to high level competition, you can set achievable goals for yourself that make the games more fun without requiring you to go crazy. It often seems like people only see scrubs and top players and forget that there's a lot of room in between that gives a lot of leeway and a large variety of potential playstyles. And there are games with a low skill ceiling where getting decent scores doesn't take much time, though usually the scoring isn't very exciting there.
