Brave Fencer Musashi, FF Anthology, FF Tactics, Saiyuken Journey West, Loaded, Einhander, FFVII & VIII, Wild Arms, Mechwarrior 2, Fear Effect games, Ghost in the Shell, Wing Commander games, Colony Wars games, Alundra, Beyond the Beyond, Xenogears, Martian Gothic...

castlevania chronicles was cool- worth checking out if you want more castlevania
shadow tower and king's field are fantastic if you can tolerate the controls and slow pace
countless JRPGs, way too many to mention. check out a list of the best and play literally any of the top 20, PS1 is almost as good as the SNES for RPGs
abe's oddysee is a fantastic puzzle platformer, and the first rayman is cool too if you want a challenge (seriously, its continue system is punishing). still looks beautiful today.

These are all games I've personally enjoyed and currently own. Gran Turismo might be good if you like racing, I had fun with NHL 98 demo back in the day. I'm not much of a JRPG person, but Legend of Dragoon is neat and Wild Arms is unique setting wise. Battletanx: Global Assault and Rampage: World Tour are solid titles too, the Disney games are decent collectathons, N2O was a standout title. Darkstone was a shitty port, Dark Forces is decent. That pretty much sums up all the titles I've played.
