We all know that all the Castlevania games after Simon's Quest are essentially the same as Castlevania II, but why don't they put Simon in the title anymore?

Because Simon is dead. Every Castlevania game is a different Belmont in a different Timeline.

Because the US localizers were no longer able to spin every game as "Simon fights Dracula again".

>The Adventure is so plotless that the localizers don't even know the Belmont is Christopher and so he just gets called Simon again

Dracula resurrects whenever there is enough carnage or someone explicitly summons him. SOTN for example is only five years after Rondo of Blood, Portrait of Ruin is 30 years after Bloodlines, and Dawn of Sorrow's Julius Mode has Soma become Dracula 40 years after the battle of 1999.
