Why are official emulators made by Sony/Nintendo inferior to the ones made by hobbyists? They have all the documentation. I don't understand how this is possible.

Company-made emulators have to be just good enough so that the average player won't notice any problems (very low bar) and only has to support whatever games they have the license to rerelease. Unofficial emulators, meanwhile, are constantly tested by the entire internet using all kinds of obscure software or homebrew.

modern game companies are profit over anything. Normies don't give a shit about emulation accuracy so they don't bother to put more ressources into it. They could develop perfect emulators if they wanted to

Xbox emulators made by MS tend to have issues because the original Xbox has a highly proprietary chipset by Nvidia that does shit in weird ways and apparently Nvidia isn't all that interested in helping
Nintendo emulators are shit because Nintendo doesn't make the consoles. If you look at the files in the gigaleaks you'll see that after SGI downsized a workstation to become an N64 that some of the engineers involved founded their own company. It has many names but the most commonly known ones are BroadOn and RouteFree. They alongside the partners for that particular console ATI, ArtX, IBM, Nvidia and many many others end up doing most of the design work. Nintendo ends up mostly specifying what it needs to achieve for what price and designing things like the controllers. So Nintendo's doing the best it can with in-house emulators but they just don't have the expertise required.
As for Sony? They're just lazy. They've made amazing emulators in the past but these days just can't be arsed to port them or make new ones so they just license open source software instead.
