Due to having to buy a new cell phone; I can only afford to by either the FX Pak Pro or the GBA Everdrive. My question is: Which would people consider the better to get due to emulator quirks that occur in the respected console's emulator? I'm leaning towards the GBA Everdrive now, but also would like to play the RPGs on the SNES.

Generally, the more people have the vaccine, the easier it is for people who straight up can't get it at all.
Also, yes. Even with chickenpox, you still have a small chance of getting it even after the vaccine. It's just that it's a much smaller chance with much milder symptoms. I have the sd2snes and really theres only a few good fx chip games, I brought it on the promise that you could make fx games faster but that update has not happened, felt I was lied about that point. Mario rpg, Yoshi island, Dragon ball z and Stunt race fx, thats really all the decent chip games you are getting and you can just buy the cartridges for not that much.

I did buy the krikkz gba cart because my old flash cart doesn't seem to work and the old ones didn't support big sd cards anyway.

You can "overclock" the FX emulation in the options however you need to curb your expectations. The limiting factor on superfx was the transfer of data from the cart to VRAM more than the specs of the chip itself. Even if you had a 10GHz SuperFX chip you can't get 60fps stunt race fx. What you can do is get a more stable but still low framerate.

Check out this site. They hacked Canon DSLRs to get a raw 14 bit feed from the CCD that was writing to CF. At the time there was plenty of discussion about building some kind of HDD/SSD interface because it was writing 6GB a minute and CF was limited to 128GB at the time and the write speed was <80 MB/s.
