I think the problem is less the design being present and more it sucking, collect-a-thons were popular and beloved at the time, and while DK64 had and still has it's fans, it's absolutely not as beloved as the Banjo games for one reason and one reason only, Rare decided to add more hours of playtime through padding, thanks to various items that can only be collected by one single Kong requiring you to replay the levels with 5 characters or sometimes going back with new abilities and walking quite a bit just to get something like a colored banana.

Also, Rare's insistence on you having to collect a lot of stuff to proceed, which was a common design choice of theirs, true, but their games typically only had you controlling one character, not 5 with no way to instantly change characters in the middle of a level.

No shit. As a kid it took me years to finish DK64 with 101%, that didnt stop me from enjoying it, I just took it slow since I had a lot of free time. I have never played it again ever since, because I know how much time it demands. Anyways, youre forgetting an important factor that the game is mostly aimed at kids, so its not having time to play or not wasnt really a problem.

Going back to change characters never bugged me that much.
People always go "boo hoo you need to replay the same level 5 times!" but that's not how the game actually works. You don't do the same exact challenges over and over with each kong. It also makes it fun to go back to old levels with new kongs you've unlocked in order to see what else you can find in there.

Eh, I used to think that, but the DK64 hate is hugely disproportioned. I played this game to completion a few years back and it wasn't nearly as bad as I thought it'd be. Then again, I came from playing a lot of 6th/7th gen games with a LOT of padding at the time (GTA games, etc), so DK64 felt almost arcade compared to those.

like i get the idea of an interconnected world where doing tasks in one world affects the other to a degree is cool
but the entire game is just roadblocks, none of what they did to pad the game out is interesting

Because Metroidvania is fun, because taking what makes it fun into giant 3d worlds is cool. Banjo-Tooie is awesome because getting all ten jiggies in each world is an accomplishment you have to go out of your way to achieve.
