Name a singleplayer game that is

It doesn't exist. Every bit of legitimate game design just gets less exciting each replay until its boring. No retro game will be fun in the year 3000 unless you've forgotten it.

I know a dude who played shinobi arcade for 10 years. Doom has been popular since release almost 30 years ago. The tetris guys, fighting games, bemani, etc pretty much played the same game for aeons.

Final Fantasy V
The job system is so robust I've played it probably a dozen times and never ran out of job combos to try. Also a handful of the jobs like Summoner and Blue Mage add a whole new layer to the game with huge quests to find all their magic.
